Needed:
2 boneless skinless chicken breasts.
2 Bell Peppers
Aunt Caroline’s Bourbon BBQ Sauce (or your favorite flavor)
1 Cup cooked brown rice
Preferred type and amount of cheese/s

Aunt Caroline’s Bourbon BBQ Sauce (or your favorite flavor)

Preferred type and amount of cheese/s
Directions:
Slice peppers in half any which way you like or just cut the tops/stems off.
Fill pot with water, place peppers in water and bring to rolling/roiling boil.
Boil for 5 minutes.

Cook chicken fully and shred with forks in pan...
Add desired amount of Aunt Caroline’s Bourbon BBQ Sauce (I like a lot!), rice, and your preferred cheese (I used Cheddar for two and Mozzarella for the other two).
Stir till thoroughly mixed.
Stir till thoroughly mixed.
Spoon Chicken, cheese, rice mixture into peppers.
Top with more cheese.

Bake 10 minutes at 350º
Drizzle BBQ Sauce on top.

I didn’t add it in this version but I think bacon and onions would be a great addition to the recipe. As an afterthought I served two of the peppers with bacon on the side (shown in first photo).
